Pasta with aubergine
- a firm and regular favourite

Fresh ingredients: aubergine, mozzarella

Stored ingredients: onions, tinned tomatoes, basil, pasta (penne, fusilli, farfalle etc)

Dice the aubergine and fry it dead slow with onions. Add a tin of tomatoes, some basil and a little sugar.

When cooked, add the pasta to the sauce and stir in the mozzarella. Serve and eat promptly (which isn't difficult).
