Fresh ingredients: leeks, carrots; optionally celery & onion
Stored ingredients: tin of plum tomatoes, vegemince, red lentils; optional herbs motherwort, alfalfa seeds, rosehips
Now, don't ask me to explain why minestrone (which after all has lumps in it) qualifies as a soup not a stew... especially as it's a meal in itself.
On further discussion, it would qualify as a stew if you start by frying lumps of meat, then boil them up with the veg.
Slice the leeks and put them in a saucepan with a tin of plum tomatoes, some vegemince, red lentils, grated carrot, sugar, salt and olive oil. You can also put in chopped celery, and a bit of onion if you're short on leeks.
If you've a cupboard full of herbs like we have, you can add a couple of teaspoons each of motherwort, alfalfa seeds and rosehips.
Boil this up for about half an hour and it's done.
