Fresh ingredients: melissa (aka lemon mint, lemon balm), bread to accompany
Stored ingredients: quorn pieces, onions, frozen peas
This recipe is dedicated to my dad who presented us with a pot of "lemon mint" (also known as "lemon balm" or melissa). With plenty of fresh bread, it will suit four dainty eaters, or two pigs like us.
Take a bag of frozen quorn pieces, a bag of frozen peas, two onions cut into big pieces, pinch of salt and white pepper and two handfuls of fresh melissa.
Put a splash of olive oil and a big knob of butter in a pot with a lid; add the ingredients, cover and cook on very low heat until it's ready (i.e. begins to dry out), which might take up to half an hour. Don't let it stick and burn.
