Fresh ingredients: eggs, milk, veg to accompany

Stored ingredients: quorn or vegemince, onions, self-raising flour, stock cube, marmite (optional)

Fry some quorn mince and chopped onions. While they're on, make Yorkshire pudding batter by mixing egg into self-raising flour and then add milk a bit at a time till it's wet enough; for a dish made in my grillpan, I use 3 eggs, and about 2 cups of flour.

When the mince and onions are nearing being cooked (don't clean the frying pan yet), put them into a deep oven tray (or the grillpan) and pour the batter over the top.

Put it in a medium hot oven to cook until it's lightly browned (say 15 mins); avoid overdoing it or it'll be too dry and hard on the top.

While it's on, boil some veg to go with it. Keep the veg water and put it in the pan used for frying the mince and onions with a stock cube (add a bit of marmite if you like); thicken with some cornflour and use for gravy.
