Peppered fillets

Fresh ingredients: Peppers, bread to accompany

Stored ingredients: Quorn fillets, mint, vinegar (preferably balsamic)

Cut plenty of pepper into very thin slices and fry; stirring around until coloured. Add quorn fillets (chicken-style) and fry. When they're done add mint, salt, and a dessert spoon of vinegar (preferably balsamic); cover and cook for a minute.

Serve with fresh bread if possible.

Variations; with chunks of quorn or soya instead of fillets, cut the pepper into similar sized pieces instead of slices.
